Vegan Lemon Poppy Seed Muffins

We’re in the mood for baking something yummy today. Let’s try out these Vegan Lemon Poppy Seed Muffins!

Ingredients:

🧁 2 scoops (26 g) Formula 1 Shake Mix Vanilla Cream Flavoured
🧁 1 scoop Multifibre
🧁 1 tbsp (14 g) Protein Drink Mix Vegan
🧁 2 1/2 cups self-rising flour
🧁 1 tbsp poppy seeds
🧁 1 tsp baking powder
🧁 1 lemon (zested and juiced)
🧁 1 pinch salt
🧁 1/2 cup egg replacer (or equivalent for 3 eggs)
🧁 1 cup sugar
🧁 1/2 cup canola oil
🧁 1/2 cup almond milk (or soy milk)

Instructions:

Heat the oven to 177 Β°C and line a 12-cup muffin tin with paper or silicone liners. In a large mixing bowl, whisk together the Formula 1 Shake Mix, Protein Drink Mix Vegan, flour, poppy seeds, baking powder, lemon zest, and salt. Follow the instructions on the packet of your egg replacer to make the equivalent of 3 eggs and whisk lightly in a bowl to froth up. Whisk in the sugar, oil, and lemon juice. Still whisking lightly, add the liquid to the dry ingredients in the bowl. Whisk in the milk and continue to whisk until the batter is thick and lump-free. This should happen fairly quickly. Spoon the muffin mixture in the prepared cups, filling each two-thirds full. Tap the tin lightly on the counter-top to settle the mixture. Pop the tray into the centre of the oven and cook for 20 minutes. The muffins are ready when risen, golden in colour, and firm in the centre when pressed slightly. Remove from the oven and leave to cool in the tray. Decorate as desired.

Makes 12 muffins.

  • Gently fold egg whites into batter until combined.
  • Shape into a baguette shape and bake at 180 Β° C for 10 to 15 minutes.
  • Remove from the oven and cut into 1 cm thick pieces then return to the oven for another 10 minutes.

πŸ˜‹1/2 cup pineapple juice
πŸ˜‹1/4 cup cream of coconut
πŸ˜‹Pineapple slice, for garnish

Instructions:

Add PDM, ice, pineapple juice, and cream of coconut to a blender.
Blend until slushy. Pour into a chilled hurricane glass and garnish with a pineapple slice. Serve and enjoy with friends.

Let’s make these amazing Protein Crepes with some summer berries for an elegant and delectable breakfast.

Ingredients:

πŸ“ 1 tbsp (14 g) Protein Drink Mix
πŸ“ 3 egg whites
πŸ“ 1 cup of strawberries and blueberries

Instructions:

Place a non – stick pan over medium heat. In a bowl combine egg whites and Protein Drink Mix and whisk until Protein Drink Mix is dissolved. Scoop about 1/3 of the mixture into the pan and rotate the pan around so the batter spreads thin. Cook until the bottom is lightly browned and flip it over to cook through. Garnish with strawberries and blueberries.

Ingredients:

1 scoop (13 g) Formula 1 Shake Mix Spiced Apple Flavoured
2 tbsp (28 g) Protein Drink Mix
2 cups old-fashioned rolled oats
1 tsp ground cinnamon
2 tbsp ground flaxseed
1/2 tsp salt
1 tbsp chopped hazelnuts
1 tbsp chopped walnuts
1/2 tsp allspice
1/2 cup almond butter
1 tsp vanilla extract
2 tbsp honey
1/4 cup unsweetened, dried cranberries
1 cup grated granny smith apple tossed with 1 tsp lemon juice

Instructions:

Mix the F1 Shake, PDM, oats, cinnamon, flaxseed, salt, hazelnuts, walnuts, and allspice.
Stir almond butter, honey , and vanilla extract together. Mix with oat mixture until fully combined.
Stir apples and dried cranberries with oat and nut butter mixture until fully combined.
Using your hands or a tablespoon, form balls with the oat and apple mixture. Store the energy bites in your fridge in an airtight container for up to 4 days.

Ingredients

πŸ… 2 Β½ tbsp Gourmet Tomato Soup
πŸ… 1 tbsp Personalised Protein Powder
πŸ… 2 tbsp olive oil
πŸ… 1 large yellow onion, peeled and diced (2 cups)
πŸ… 2 large garlic cloves, finely chopped
πŸ… 5 medium carrots (500 g), peeled and cut into 1 Β½ cm pieces (2 cups)
πŸ… 1 tsp ground coriander
πŸ… 1 Β½ tsp salt
πŸ… ΒΌ tsp ground white pepper
πŸ… 3 tbsp white miso paste
πŸ… 1 medium head cauliflower, trimmed and cut into florets
πŸ… Β½ tsp lemon zest
πŸ… 2 tbsp lemon juice, more to taste
πŸ… 2 tbsp chopped cilantro leaves, for serving

Instructions:

In a large pot over medium heat, add the oil and heat until it starts to simmer. Stir in onion; cook, stirring occasionally, until soft and lightly coloured, about 7 minutes. Stir in garlic and cook for 1 minute.

Add carrots, ground coriander, salt, pepper and 6 cups water to the pot. Stir in the miso until it dissolves. Bring mixture to a simmer and cook, uncovered, for 5 minutes. Stir in cauliflower and cook, covered, over medium-low heat until the vegetables are very tender, for about 15 minutes. Remove the soup from the heat. Using an immersion blender, purΓ©e the soup until smooth. If necessary, return the purΓ©ed soup to the heat to warm through. Stir in the lemon zest, juice, Gourmet Tomato Soup, and Personalised Protein Powder just before serving.

Instructions:

Preheat oven to 245 degrees Celcius.
Combine F1 Shake, Multifibre, oil, garlic, basil, rosemary, parsley, red pepper flakes, and salt in a large bowl. Toss in potatoes until evenly coated. Place potatoes in a single layer on a roasting pan or baking sheet.
Roast in pre-heated oven, turning occasionally until potatoes are brown on all sides, 20 to 30 minutes.

Ingredients:

🧁 1 scoop Formula 1 Shake mix, Café Latte Flavoured
🧁¾ cup cake flour
🧁¾ cup whole-wheat pastry flour
🧁½ cup unsweetened cocoa powder
🧁½ teaspoon baking soda
🧁½ teaspoon salt
🧁¼ teaspoon baking powder
🧁1 cup brown sugar
🧁½ cup light butter or coconut oil, softened
🧁2 large eggs
🧁1 teaspoon vanilla extract
🧁¾ cup almond milk

Frosting :

170 g bittersweet or semisweet chocolate, finely chopped
β…“ cup cream
Β½ teaspoon vanilla extract
2 tablespoons mini chocolate chips (Optional)

Instructions:

Preheat oven to 177 degrees, 12 (1/2-cup) muffin cups with paper liners.
Whisk Formula 1 Shake Mix, cake flour, whole-wheat flour, cocoa, baking soda, salt and baking powder in a medium bowl.

Beat sugar and light butter (or coconut oil) in a large mixing bowl with an electric mixer on medium speed until combined. Beat in eggs, one at a time, until well combined. Add vanilla. With the mixer on low, alternately mix in the dry ingredients and almond milk, starting and ending with dry ingredients and scraping the sides of the bowl as needed, until just combined. Divide the batter among the prepared cups. (They should be about 3/4 full).
Bake the cupcakes until a toothpick inserted into the center comes out clean, 18 to 22 minutes. Let cool in the pan for 5 minutes. Transfer to a wire rack and let cool completely.

Frosting:

Place chocolate in a heatproof medium bowl. Heat cream and vanilla in a small saucepan over medium heat until simmering (do not let boil). Pour the cream over the chocolate and let stand for 3 minutes. Whisk until smooth, then beat with an electric mixer until fluffy and very slightly lightened in color, 1 to 2 minutes.

Spread the frosting on the cupcakes and decorate with mini chips, if desired.

βœ…2 scoops (26 g) Formula 1 Vanilla Cream Flavoured Shake Mix
βœ…1 scoop of Protein Drink Mix
βœ…2 tbsp flour
βœ…ΒΌ tsp baking powder
βœ…Pinch of salt
βœ…2 medium eggs
βœ…100 ml skimmed milk (1,5 % fat)

Instructions:

Spray the surface of the waffle iron with non-stick spray and preheat. Stir Formula 1 Shake Mix, flour, baking powder, and salt together in a bowl with a wire whisk. Add egg and milk and stir just until dry ingredients are moistened. Pour onto prepared waffle iron and cook until the waffle releases from the waffle iron and is cooked through. Top with fruit, if desired.
